Chris Skinner, Assistant Professor, Nutrition and Food Sciences Department

Chris SkinnerR. Chris Skinner is joining the Department of Nutrition and Food Sciences (NFS) as assistant professor of nutrition. Skinner’s lab will focus on how nutrition impacts metabolic health, as well as investigating the potential of novel functional foods developed from waste.

He will be teaching introductory and advanced courses in nutrition and is excited to return to a professor role. Prior to joining NFS, Skinner most recently served as research and outreach coordinator for the UVM Food Systems Research Center. He previously served as assistant professor of health sciences at University of the Ozarks in Clarksville, AR.

Skinner has a PhD in nutrition and a MS in exercise physiology from West Virginia University, and a BS in exercise science from West Virginia Wesleyan College. Outside of work, he enjoys attending concerts, staying active, playing guitar, and trying to keep his dog and cats entertained and happy.
